For enemy steals, drops, etc, 'Enemy Encyclopedia' from SinirothX is great. EDIT: Oh, but I wouldn't really recommend printing it, though, it's quite a bit of content. Saving the file on a tablet/laptop, picking more specific guides to what you want to accomplish, making a summary for yourself and then printing that could be some options. BeefyBuffalo's guide is good but I miss the info on hidden chests and items to pick up that BradyGames has in theirs. I'm not a 100% completionist but hate to miss items.

I find if I use multiple guides I end up missing stuff. I may try your idea of combining a few guides into 1 printable book. At $0.10 per page it wouldn't be too terribly expensive. Otherwise getting the vanilla X-2 BradyGames guide for $5 and supplementing it with online guides might work. I don't know why they don't reprint these guides, especially now that they've reissued all the games for PC!
I looked around a lot and while there were plenty of walkthroughs and guides there was nothing I preferred over the original book plus they're works of art. And really, how much is a game from 2003 going to change?
